Grilled Tofu Skewers with Sriracha Sauce

Ingredients

  • 1 (8 ounce) container extra firm tofu, drained and sliced into large chunks
  • 1 zucchini, cut into large chunks
  • 1 red bell pepper, cut into large chunks
  • 10 large mushrooms
  • 2 tablespoons sriracha chili garlic sauce
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1/4 cup diced onion
  • 1 jalapeno pepper, diced
  • ground black pepper to taste

Method

  1. preheat oven to 350?/li>
  2. bring noodles to a boil then drain
  3. while noodles are cooking in a bowl mix ricotta cheese, mozzarella cheese and olives together. it will be thick
  4. cook ground beef then drain
  5. add spaghetti sauce to ground beef
  6. add pasta to beef and sauce mix, stir until well blended then move to 16x9 casserole dish
  7. spread cheese mixture all over evenly
  8. place pepperonis on top snd remember to partially overlap pepperonis since they shrink
  9. back in 350?oven for 20 minutes
